We tackled something similar last year — the key was combining point-of-sale data with a quick conjoint survey to separate 'waiting it out' vs 'switched brands' behavior. Specifically, track whether switchers are returning once stock normalizes (loyalty panels like Nielsen or your own CRM cohort analysis work great for this). If return rates are low within 90 days, you've got real brand erosion, not just delay.
